Course Synopsis:

The Advanced Diploma in Hospitality (Café Management) course is designed for learners who wish to develop knowledge and skills required by junior managers and entrepreneurs. Throughout the course, learners will have the opportunity to prepare themselves for a career in the food and beverage industry. Learners will also have the opportunity to gain valuable work experience through the 6-month internship.

Course Structure:

Learners are required to complete 10 modules and a 6-month internship.

  • To execute junior managerial duties in a full-fledged modern cafe.
  • To perform hospitality and food & beverage functions.
  • To display soft skills such as communication, creativity, teamwork and work ethic.
  • To progress to a relevant bachelor’s degree with advanced standing.

Core Modules

Title: Business Environment (60 hours)

This unit will develop learners’ understanding of the national and global business environment and the internal and external circumstances in which different organisations operate. Learners will have the opportunity to examine the challenges faced by hospitality operators.

Title: People in Organisations (60 hours)

This unit aims to develop learners’ knowledge and understanding of those aspects of organisations that concern and support people. This includes communication practices, teamwork, remote working and other organisational structures. Learners will have the opportunity to propose suitable workplace strategies for hospitality organisations.

Title: Financial and Management Accounting Techniques for Managers (60 hours)

This unit aims to develop learners’ knowledge and understanding of fundamental financial and management accounting techniques used by different organisations.

Title: Communication Skills for Business (60 hours)

This unit aims to develop knowledge and understanding of the communication practices within organisations and learners are introduced to the different modes and channels of communication used in organisations. In addition, learners will acquire communication skills needed in a hospitality environment.

Title: Marketing Mix (60 hours)

This unit aims to develop learners’ understanding and knowledge of the marketing mix. A learner will develop skills to apply the seven aspects of the marketing mix to businesses. Learners will get to develop various types of marketing plans for café business.

Title: Entrepreneurship (60 hours)

This unit aims to provide learners with an understanding of entrepreneurship in business, the skills and qualities needed by a successful entrepreneur and the roles an entrepreneur plays in starting and developing businesses. Learners will acquire skills in preparing for a café business venture.

Title: Customer Relationship Management (60 hours)

This unit aims to develop learners’ knowledge and understanding of the scope and importance of Customer Relationship Management (CRM). Learners will be equipped with skills to deliver effective CRM in hospitality and café settings.

Title: Corporate Social Responsibility (60 hours)

This unit aims to develop learners’ understanding of Corporate Social Responsibility (CSR) issues and impacts of CSR policy. Learners will be able to use their knowledge and understanding to make recommendations for responsible business practice.

Title: Pastry & Baking Techniques (60 hours)

This unit aims to develop learners’ knowledge and skills in designing and producing a variety of pastries and breads.

Title: Food & Beverage Operations (60 hours)

This unit aims to equip learners with knowledge and practical skills required in a food and beverage environment. Topics include food and cuisines, alcoholic and non-alcoholic beverages, table-setting, serving techniques, etc.

Title: Industry Attachment

Learners will get to apply the knowledge and skills which they have gained in the classroom in a real work setting. Learners will be deployed to Food & Beverage positions in the hospitality Industry for a period of 6 months. Industrial Attachment is a compulsory and integral part of the course. Should a learner be unable to complete the Industrial Attachment due to circumstances beyond the control of the college, the learner will be required to complete a Project Work instead.

Duration: 15 months full-time: 9 months classroom + 6 months industry attachment
The maximum candidature period is 30 months (Full-time)
Class Frequency: 5 days per week, 4 hours per day (full-time)
Total Contact Hours: 600 hours
Attendance: 90% (International Students with Student Pass Holder),
75% (Local Students and Non-Student Pass Holder)
Assessment Method: Students will be assessed by a variety of assignments and examinations
Graduation Criteria: In order to qualify for the course award, the student must fulfill two criteria: successfully passing all modules and ensuring a minimum class attendance rate of 75%
