  • Use safely different types of kitchen tools, utensils, and appliances in the preparations
  • Recipes, characteristics and use of quality ingredients.
  • Prepare ingredients and rempah
  • Taste, season and making adjustments
  • Demonstrate traditional cooking methods and techniques for different types of Advanced Peranakan dishes.
  • Control cooking time and temperature
  • Prepare the various types of Advanced Peranakan dishes
  • How to check for doneness
  • Identify common faults and demonstrate how these faults can be avoided
  • Quality standards of Advanced Peranakan dishes
  • Garnishing, presenting and serving the finished dishes
  • Storing of cooked dishes safely
  • Return workstation to original state
  • Developing personal traits for the workplace
