  • Builds on knowledge and skills acquired from “Make Basic Breads”
  • Assemble and prepare ingredients and equipment for baking artisan and decorative breads
  • Procedures for mixing and fermenting dough
  • Giving flavours in artisan and decorative breads
  • Formulation of breads (types of flour, water and hardness of water, protein levels and types of protein)
  • Prepare, rest, divide, round, shape and proof dough
  • Scoring (cutting of dough)
  • Bake the different types of artisan and decorative bread and indicators of doneness
  • Methods for cooling and storing of the end products
  • Common breads fault and possible remedies
